Featured Recipe: Billy’s Steakhouse Chicken Catalina

Prior to selling cars, our General Manager, Billy Mullinax, enjoyed a successful career in the restaurant business. This delicious, kid-friendly and seriously-easy recipe for Steakhouse Chicken Catalina, using only bottled Catalina dressing and black pepper, was inspired by one of his favorite and most popular restaurant menu items. Cooking and clean-up are a breeze, too. Serve with a mixed green salad, pasta, rice, or potato salad for a quick and healthy summer meal any night of the week.


Skinless, boneless chicken breasts
Catalina Salad Dressing
Black Pepper, to taste

Place chicken in a large Ziplock bag. Pour enough Catalina dressing to cover chicken. Add ground pepper to taste. Seal bag and mix well to coat chicken. Marinate in refrigerator overnight, or up to 24- 36 hours. 

Remove chicken from refrigerator 30 minutes before cooking. Grill, bake, or broil until fully cooked, turning halfway and basting generously with additional Catalina dressing.
